I love putting together breakfast casseroles and sweet or savory quesadillas because I can enjoy them for breakfast, lunch, and dinner. These balsamic blackberry and brie puff pastry bites fall under the category of meals that can be repurposed because you can enjoy these savory sweet eats as a grab-and-go breakfast, easy heat up snack or an end of the day treat.

You can throw these sweet and savory pastry treats together in just 20 minutes. It takes about 10 minutes for the blackberries, sugar and vinegar to simmer together, and this is the perfect time to enjoy a cup of coffee before getting ready for work or waking up your kiddos. It's that beautiful moment of peace before your house bursts to life as everyone starts getting ready for their day.

I’ve had this recipe in my back pocket for years. In college, I remember friends throwing together last-minute brunches, study dates, and dinner parties. I’ve never enjoyed running to the store to buy a baked good when I could just as easily make these savory treats with items that I normally keep in my fridge.

Ingredients:

  • 1 sheet of thawed puff pastry (I like the Pepperidge Farm brand), rolled slightly thinner than it comes. Cut into 12 pieces of approx 3x3 inch squares.

  • 20 California Giant blackberries, chopped

  • 2 T sugar

  • 2 T balsamic vinegar

  • 1 wedge of brie cheese (enough to cut into 12 small squares)

  • Sea salt to garnish

Directions:

  • Preheat oven to 375 degrees

  • In a small pot, combine chopped blackberries, sugar, and balsamic vinegar. Bring to a gentle simmer for 1 minute and then let cool.

  • Grease muffin pan and then place squares of dough into each muffin hole, pressing down the middle of the dough so that the 4 corners go up the sides of the pan.

  • Place 1 small square of cheese into the middle and then top with a spoonful of the blackberry mixture

  • Bake for approximately 10 minutes or until the edges are golden brown. Remove from the oven and then sprinkle with a pinch of sea alt to garnish.

  • Let cool slightly and then serve!
