Healthy St Patrick's Day Inspired Breakfast

I can vividly remember begging my mom to let me dye my scrambled eggs and milk green in honor of St. Patrick’s Day. Being the type of mom to let her daughter experiment and be creative, she agreed. Realizing that dying food green isn’t for everyone (I'm slightly grossed out thinking about eating the aforementioned breakfast), I wanted to think of some healthier versions for a St. Patrick’s Day themed breakfast.

First up – a berry-filled green smoothie. The blueberries and strawberries mask the flavor of the spinach, so your little ones will never know the “magic” that makes this smoothie green :)

Next, a “cloudy rainbow” with a “pot o’ gold” at the end. Use fresh strawberries, melon, grapes and blueberries to create the rainbow, and use unsweetened coconut to create the cloud. In a separate gold bowl (found at Target), sliced bananas mimic the pot o’ gold.
