You guys know how much I love peanut butter, so you can only imagine how much I loved peanut butter and jelly sandwiches as a kid. Growing up, my mom would make me turkey and cheese sandwiches Monday through Thursday, and a PB&J sandwich every Friday as a special treat! Little did she know, I was trading my turkey sandwiches all week long for my best friend's PB&J's (sorry, mom). So, you could say I'm kind of a big fan.
Fifteen years later and the PB&J is back and better than ever as a parfait. It's everything I loved about the classic PB&J, with a fresh, healthy twist that I just can't get enough of! I simply replaced the bread with this sweet Medjool date crumble and the jelly with fresh California Giant strawberries, and the outcome is to-die-for. You have to give it a try!

Ingredients
For the date mixture:
1/2 cup almonds or pecans
1/2 cup pitted Medjool dates
1/2 cup oats
1/2 teaspoon cinnamon
1 teaspoon good vanilla extract
layer with:
California Giant strawberries
Your favorite peanut butter (I used creamy JIF)
Instructions
In a food processor, combine ingredients for the date mixture. Pulse until mixture is crumbly. Refrigerate until ready to use.
In a mason jar, assemble by layering the date mixture, peanut butter and berries. Repeat until full. Enjoy!
