Ingredients:

For the Filling:

  • 1 cup smooth peanut butter
  • 1/4 cup powdered sugar
  • 1/4 cup finely chopped fresh strawberries

For the Chocolate Coating:

  • 12 ounces dark chocolate, chopped
  • 2 tablespoons coconut oil

Instructions:

  1. Prepare the Filling: Start by mixing the smooth peanut butter, powdered sugar, and finely chopped fresh strawberries in a bowl. The powdered sugar adds a touch of sweetness, while the strawberries bring a burst of fruity flavor to the peanut butter filling. Set the mixture aside.

  2. Melt the Dark Chocolate: In a heatproof bowl, combine the chopped dark chocolate and coconut oil. Melt the chocolate using a double boiler or by microwaving in 30-second intervals, stirring well each time. The coconut oil helps create a smooth and shiny chocolate coating for your peanut butter cups.

  3. Line the Muffin Tin: Line a muffin tin with paper or silicone cupcake liners. This will make it easier to remove the peanut butter cups once they are set.

  4. Assemble the Cups: Spoon a small amount of melted chocolate into the bottom of each cupcake liner, spreading it to cover the base. Place the muffin tin in the refrigerator for a few minutes to allow the chocolate to set slightly.

  5. Add the Peanut Butter Filling: Take the muffin tin out of the refrigerator and add a dollop of the peanut butter and strawberry mixture to each cup, making sure not to touch the sides of the liner. Flatten the peanut butter filling with the back of a spoon.

  6. Cover with Chocolate: Pour the remaining melted chocolate over the peanut butter filling in each cup, ensuring it covers the entire surface. Use a spatula or the back of a spoon to smooth out the chocolate and create an even coating.

  7. Chill to Set: Place the muffin tin back in the refrigerator and let the peanut butter cups chill for at least 1-2 hours, or until the chocolate is completely set.

  8. Enjoy! Once set, peel off the cupcake liners, revealing your beautifully crafted Strawberry Dark Chocolate Peanut Butter Cups. Indulge in the perfect blend of rich dark chocolate, creamy peanut butter, and the delightful surprise of fresh strawberries.
