I could eat breakfast for every meal of the day. Especially when it includes paleo style blueberry pancakes. And bacon. Because bacon makes everything better.
These pancakes are SO good. I was a little intimidated at first. The batter is a little lumpy and thick, compared to normal pancake batter. But holy moly. They taste incredible. You would never know they are paleo. To top them off, I made some paleo blueberry compote and drizzled some pure maple syrup.

Ingredients for the pancakes:
Handful of California Giant Blueberries
2-3 tbsp of coconut oil
3 eggs
¼ cup of coconut milk
½ tsp of vanilla
¼ cup of coconut flour
¼ tsp of cream of tartar
1/8 tsp of baking soda
1/8 tsp of seal salt
Ingredients for the compote:
A couple handfuls of California Giant Blueberries
1-2 tbsp of honey
1/4 cup of water
Instructions:
Use a spatula to mix together the coconut oil and honey. Slowly add the eggs to this mixture. Add coconut milk and vanilla. Then add the coconut flour. Finally, add the cream of tartar, baking soda and sea salt. Gently mix together. Heat a large pan with butter or ghee. Use a spoon to dollop mixture onto the hot pan. Cook until mixture has bonded together and edges are brown, flipping once.
For the blueberry compote, simply add blueberries, honey and water to a hot pan. Sautee for about 5 minutes, using spatula to help breakdown the blueberries.
