Nothing says love like waking that special someone up with toast smothered in homemade jam. You really have to dedicate time and energy when creating this special spread! Whether you're making this sweet treat for that special someone or giving cute jars of jam away as gifts to your friends, you're sure to brighten everyone's day.
You're going to love this jam! I like to make mine a little syrupy so it runs down the side of my toast. It always looks SO pretty and fresh. This definitely isn't your typical store bought, jiggly jam - it has chunks of fresh Envy™ apples and blackberries which gives it such a great texture and delicious flavor. These apples are seriously amazing. They're super crisp and have the perfect amount of sweetness to balance out juicy and tart blackberries.
Valentine's Day is next week and wouldn't little jars of this homemade jam be the cutest gift? You could give it away or you could invite your favorite ladies over for a Galentine's Brunch. Your ladies will be so touched that you've invite them to a girls only Galentine's Day event. This homemade blackberry and apple jam can only sweeten your weekend brunch!
Double the recipe and share this homemade treat with all of your friends, or make a smaller batch for you and that someone special :) We hope you have a great Valentine's week filled with lots of love and fresh berries!
Ingredients:
- 1 ½ cups small diced Envy™ apples- about 1 ½ apples (reserve ½ cup)
- 1 ½ cups halved California Giant blackberries - about 1 ¼ small containers of blackberries (reserve ½ cup)
- 4 thick slices of sourdough bread
Directions:
-
Blend the reserved ½ cup of diced Envy™ apples and ½ cup of halved California Giant blackberries until smooth
-
Stir together the brown sugar and pectin
-
In a large bowl, combine the diced and halved blackberries, blended mixture, and the brown sugar/pectin mixture and stir until well combined.
-
Let marinate at room temperature for at least 1 hour.
-
Pour the marinated fruit mixture into a large saute pan and bring to a simmer. Simmer over medium heat for approximately 8 minutes or until you can take the wide side of a rubber spatula and run it through the middle and the liquid doesn’t run back together all of the way.
-
Pour the mixture onto a sheet tray lined with a silicone mat and spread evenly. Let cool at room temperature or can cool quicker by placing it in the refrigerator. If not in a hurry, you can just pour the jam in a medium bowl and let chill until not longer warm.
-
Once jam is ready, spread both sides of the sourdough slices with softened butter.
-
Grill both sides until charred lines appear.
-
Remove from grill or grill pan and serve with jam. Can also use with toast, english muffins, or any other pastries!
