Strawberry and grilled asparagus salad, blackberry avocado chicken salad, blueberry and cashew farro salad... I don't know if you guys have noticed, but when springtime comes around, I just can't get enough salad. My body craves fresh, leafy greens, creamy avocado and sweet California Giant berries all season long. I even put avocado in this decadent dark chocolate blackberry tart (you have to try it)!
My latest and greatest creation is this vibrant berry avocado salad! With grilled chicken and toasted pecans, this salad will keep you satisfied for hours. Not to mention, the subtle nuttiness pairs perfectly with the bold flavor of the berries. I topped it off with some grated romano cheese and my favorite poppy seed dressing, and voila! I hope you enjoy it as much as I do!
Ingredients:
Your favorite mix of California Giant strawberries, blueberries, blackberries and raspberries
Spinach or mixed greens
1 avocado
Toasted pecans
Poppy seed dressing (I used Brianna's version)
1 grilled chicken breast
Grated romano cheese (optional)
Instructions:
Add spinach or mixed greens to a bowl, top with berries, pecans, avocado and chicken breast. Add grated romano cheese and salad dressing.
