Berry Coconut Porridge


Breakfast is the most important meal of the day for soooo many reasons. It kick-starts your metabolism, which helps you burn calories throughout the day. It gives you the energy you need to get things done and stay focused. And most of all, it sets the tone for the rest of the day. Not to mention, its my favorite meal, so why not make it the most delicious and nutritious, too?

When I think of porridge, the word "delicious" does not come to mind. In fact, words like "bland" and "boring" do. Until now. This berry coconut porridge has completely redefined this classic breakfast and I'm kind of obsessed. With simple ingredients like berries, coconut, dates, honey, cashews and lemon, I can dive into something delicious, knowing I'm giving my body all the nutrients it needs to stay healthy and productive all day long. A complete win-win if you ask me!

For the berry sauce:

1 cup California Giant blackberries

1 cup California Giant blueberries

Juice from 1/2 a lemon

2 tbsp honey 

For the porridge:

1/4 cup cashews

1/4 cup dates

1 1/2 cups water 

1/8 cup coconut flour

1/4 cup shredded coconut


The night before, combine ingredients for the cashews, dates and water in a glass jar. Let soak overnight. The next morning, pour all ingredients into a blender to combine. Pour mixture into saucepan and heat on low-med heat, whisk until creamy. 

For the berry sauce, combine all ingredients in a saucepan over low-med heat until sauce is syrupy. Pour on top of porridge.
