Have your plans to workout ever suddenly fallen through? There's always the occasional unexpected happy hour with friends or emergency errand-running, but has it ever been because you're simply just tired after a long day at work? This happened to me yesterday and it's the worst. I was looking forward to going to the gym all day long - I even wore my workout clothes to work! So what happened? Traffic. For an hour. Traffic sucked all of the energy and excitement out of me and I was in desparate need of a pick-me-up.
I couldn't have coffee, because it was already 6:30 and I wouldn't be able to sleep. And sugary energy drinks are always out of the question (yuck). What I needed was something clean, nutritious and full of natural energy, without filling me up too much. I needed these blueberry energy bites. With only five ingredients (six, if you include the chocolate chips), just a couple of these and I'm ready to go! Plus, they're beyond easy to make (no baking required!) and last 1-2 weeks in your fridge.

Ingredients
1 cup oats
1/2 cup California Giant blueberries
1/2 cup coconut flour
1//3 cup shredded coconut
1/2 cup pitted dates
1/3 cup dark chocolate chips (optional)
Instructions
Combine all ingredients in blender. Form into small balls. Store in airtight container in fridge.
