Blackberry & Pecan Belgian Waffles with Whipped Honey Butter

Snow has rained down and blessed us with a day of cuddling up by a warm fire and devouring a humongous homemade breakfast. We've got all of our staples – eggs, bacon, fruit and a plate piled high with freshly made blackberry and pecan Belgian waffles. Are you ready? This is going to be the BEST snow day breakfast ever!

These waffles are LOADED with fresh berries. Little pieces of ooey gooey blackberries burst in your mouth with every bite and if there aren’t enough berries inside your waffles, you can always deck them out with extra blackberries or pecans on top – yum!

To really take these waffles to the next level, you NEED to pair them with this homemade honey butter. It's a little extra step to take, but if you’re like me and you fill every waffle square with a little amount of butter, it's SO worth it. Every bite is an explosion of flavor that makes you want to do a little honey-drizzled happy dance.

Enjoy the rest of your snowy week and whip up a batch of these Instagram-worthy Belgian waffles. Do you have extra berries or a banana laying around? Imagine how good these waffles would be with blueberries and bananas or strawberries mixed with raspberries. Enjoy!

Ingredients:

  • 2 eggs

  • 2 cups all purpose flour

  • 1 ½ cups milk

  • ½ cup vegetable oil

  • 3 T sugar

  • 4 tsp baking powder

  • ¼ tsp salt

  • 2 tsp vanilla

  • 1 cup California Giant chopped blackberries

  • 1 cup chopped pecans

  • 1 stick unsalted butter, softened (NOT melted)

  • ⅓ cup honey

Equipment Needed:
  • Waffle maker

  • Nonstick spray

Directions:

  • Preheat your waffle maker to medium/high

  • Smash the softened butter and honey together and then mix until well combined. Set aside.

  • With a hand or stand mixer, beat eggs until fluffy.

  • Add flour, milk, oil, salt, sugar, and vanilla.  Mix on medium speed until well combined.

  • Stir in blackberries and pecans.  Let batter rest for 5 minutes.

  • Spray your waffle maker with nonstick spray.  Pour enough batter to almost cover each quadrant of the waffle maker and then close the lid. Cook for approximately 4 minutes, or until golden brown.

  • Remove from waffle maker and repeat with rest of batter.

  • While waffles are still warm , place a dollop of honey butter on top of each and allow to melt.

  • Drizzle with maple syrup and eat!
