This scrumptious, spring-inspired blackberry vanilla chia jam recipe is not only delicious, but it’s SO simple and takes just a few minutes to whip up! A lot of store-bought jams have an excess of sugars and preservatives, that’s why this recipe is my go-to spread for things like toast, pancakes, stirred into oatmeal or yogurt, or even in a classic PB&J.
So, what are these magic seeds you ask? Chia seeds deliver the maximum amount of nutrients with minimum calories – sounds too good to be true, right? But they really are just that good. The nutritional benefits of these seeds include calcium, omega fatty acids, fiber, and even protein! Mix these super seeds with the antioxidant power found in fresh, juicy blackberries and you have yourself some delicious jam packed with a punch!

Ingredients:
3 cups California Giant blackberries
4 tablespoons chia seeds
2 tablespoons maple syrup or honey
2 teaspoons pure vanilla extract
Instructions:
Place all ingredients into a blender or food processor. Blend until smooth, about one minute. Transfer to a jar. Place in refrigerator for 30 minutes before using. This should keep in the fridge for one week.
