We hope you are having a blast this summer! We certainly are with the help of this Blueberry Basil Bellini. These are really yummy and full of berry flavor. I totally had some sips this afternoon while my daughter was napping ;)
Bellinis are my go-to summer treat. We love traditional peach bellinis but this blueberry basil bellini has to be my favorite. The reduction of blueberries, sugar and basil creates a sweet and earthy taste and this blueberry basil syrup is incredibly easy to make. Pair it with Costco's Kirkland Signature Asolo Prosecco and you've got a refreshing drink that's PERFECT for the summer.
We eat berries so quickly in my household that we have to get the largest container possible! As a working mom, I don’t have a lot of time and at Costco I am able to find everything I need at an amazing price.
I love to garnish and fill my glass with extra berries. The berries are so cold and refreshing to eat once my glass is empty.

Ingredients
2 cups California Giant blueberries, plus more for garnish
750 ml Kirkland Signature Asolo Prosecco
1/2 cup sugar
1/2 cup water
5 basil leaves, plus more for garnish
Instructions

In a small pot, combine blueberries, sugar, water and basil leaves. Bring to a boil, then let simmer for 15 minutes. Remove basil leaves, and place syrup in fridge to cool.

Once cool, add two to four tablespoons of blueberry syrup to glass. Top off with champagne. Garish with more blueberries and basil.
