This Blueberry Blackberry Cobbler was SO yummy and sooo easy to make. If you're hosting a Memorial Day barbecue this weekend, this dessert is the perfect set it and forget it option.
This sweet treat is not only delicious, but also foolproof! Since it's prepared in a slow cooker, you don't have to worry about burning the cobbler in the oven. The other wonderful thing about this dessert? It won't make your kitchen hot in the summer days (like an oven would), AND it makes your home smell delicious all day!
Ingredients
3 cups California Giant blackberries
3 cups California Giant blueberries
1/2 cup sugar
Juice and zest from half a lime
1 tbsp cornstarch
3/4 cup flour
1/2 cup sugar
1 1/2 tsp baking powder
Pinch of salt
3 tbsp cold butter
1/2 cup milk
1 tsp vanilla
Directions
Combine blackberries, blueberries, sugar, lime juice & zest and cornstarch in slow cooker.
In a medium bowl, combine flour, sugar, baking powder and salt. Using your hands, knead in cold butter until coarse. Add milk and vanilla and stir until combined. Spoon flour mixture over berries.
Cover and cook on low for four hours, or until mixture is set and berries are bubbling.
