So, California Giant recently launched a Blended Splendid and Smooth sweepstakes featuring the behemoth of all blender brands—Blendtec. Entering the sweepstakes gives you access to a recipe eBook with awesome recipes ranging from creamy fudgesicles to savory sauces, and all of them are HEALTHY. After reading through the recipes (and heading to the store so I could make them), I felt inspired to make my own blender recipe: Blueberry Buckwheat Pancakes. That's right—pancakes from a blender!
Ingredients
- 4 eggs
- 1¼ cup milk (dairy or non-dairy)
- 1 tablespoon sugar
- 1 cup California Giant Blueberries
- 2 tablespoons oil
- 3/4 cup all-purpose or whole wheat pastry flour
- 1/2 cup buckwheat flour
- 1 tablespoon baking powder
- ½ teaspoon salt
Instructions
- Into the blender add eggs, milk, sugar and oil. Blend until well mixed - about 5-10 seconds.
- Add flour, baking powder and salt to the egg mixture, pulsing until just mixed. Add California Giant Blueberries
- Cook on hot greased griddle or non-stick pan until golden brown on both sides (you can pour straight from the blender).
Tip: Wondering when to flip these bad boys over? Watch for bubbles to form, and when they start to burst, gently flip and cook until done on the second side. If you want to get even more blueberry-y, I'd suggest topping with a generous portion of homemade blueberry syrup. Magnific!
