How is everyone’s New Year going?! Is everyone sticking to their New Year’s Resolution? My resolution was to eat more veggies, and I’m happy to say I’m incorporating vegetables in almost every meal! Except for breakfast…there is no way I can eat veggies in the morning. From sautéed zucchini and green beans, to brussel sprouts and asparagus, I’m finding flavorful ways to enjoy them!
One of the reasons I can’t incorporate veggies into my breakfast? Because who would ever want to ruin something as delicious as these paleo blueberry waffles with something like broccoli?! And did you hear that? These are paleo, which means they don’t have any processed grains. Just eggs, bananas, blueberries and coconut flour. A whole lotta' wholesome goodness to start your day right :)
Are you short on time and always rushed in the mornings? Make these on Saturday or Sunday, freeze them in a Ziploc bag, and during the week, pop them in the toaster for a quick, on-the-go breakfast!
If you don’t have blueberries, feel free to substitute with another one of your favorite berries. Top them off with more berries, maple syrup, yogurt, jam…the options are endless!
Ingredients:
1/3 cup California Giant Blueberries
2 large eggs
1 ripe banana
2 tablespoons coconut flour (or almond flour)
1/8 teaspoon baking soda
1/8 teaspoon vanilla extract
Directions:
Preheat your waffle maker and coat with a nonstick spray. In a bowl, beat eggs. Add banana to eggs and smash with a fork to incorporate. Add coconut flour, baking soda, vanilla extract and combine. Pour mixture into waffle maker and bake (I left mine on a little longer after the timer went off). Disclaimer: this recipe makes one really large waffle.
