Spring-Inspired Berry Moscow Mule

The weather has taken a (much needed) turn here in California, with rain forecasted over the next ten days, but I couldn’t help making these delicious, spring-inspired cocktails. Can’t you just imagine being served these while relaxing by the pool? We all can dream, right?

This cocktail was inspired by the classic Moscow mule. But I couldn’t bring myself to serve these in a copper mug. I just love how the berries sit atop the ice, so I served them in a tall, clear glass to showcase the beauty of this drink.

Ingredients (makes four servings)

4 cups fresh California Giant berries of your choosing (I used strawberries and blueberries)

1 bottle ginger beer

Vodka

Crushed ice

Mint for garnish

Instructions

Fill glasses halfway with crushed ice. Pour in your desired amount of ginger beer and vodka (I used a 2:1 ratio of ginger beer to vodka).

Muddle strawberries and blueberries using a mortar and pestle. Pour berry mixture on top of crushed ice. Garnish with mint and a straw!
