When we were little, my mom used to make this cobbler for us with just peaches. There was nothing like mom's cobbler topped with ice cream in the middle of the summer! But the addition of raspberries is just SO good. They add just the right amount of tartness to the cobbler to make each bite even more special. The best part about this cobbler skillet is how easy it is to make. The dessert comes together with only four ingredients!
If you've got a box of cake mix in your pantry that you've been wanting to get rid of, you HAVE to try this cobbler. You could also try swapping the raspberries for blackberries- both pair so well with peaches in the summer! And when the cobbler has cooked all the way through, the berries break down and thicken up, making a sweet berry sauce. Top this with ice cream and you've got a comforting, classic dessert... just like mom used to make!
I love the fact that this cobbler is made in a skillet. Can't you just picture it being pulled straight out of the oven and placed on a picnic table for everyone to enjoy? It's perfect for sharing, so make sure everyone is equipped with a spoon! Needless to say, this only lasted one day in our house :)
