It’s summer, it’s hot, and with the Fourth of July just around the corner, we couldn't think of anything more refreshing than a cold strawberry jello shot. This recipe is so much fun and SUPER simple, and it's the perfect party cocktail to make ahead for friends. Add a little special touch to a typical jello shot in a plastic container and try making them right inside a fresh, sweet strawberry!
I like to grab the largest strawberries I can find. The bigger the berry, the easier to hull out, AND the more shot per strawberry :) Find a fun platter and arrange all of your fancy finished shots for a fun presentation for your party guests. You can even surround the shots with more fresh berries for an extra special platter and a snack in between shot time.
Want to shake things up a bit? Try using different flavored gelatin such as lime or orange. These shots are soo tasty that they are sure to be eaten up quickly, so make sure to bring along more for back up!
The sugar rim around the top of the berry has to be the cutest part of these jello shots. What better way to dress a cocktail than with a sweet rim of sugar?
Ingredients:
3 oz box of strawberry jello
Zest of 1 lime
½ cup Titos vodka (Or can try rum or tequila!)
Juice of 2 limes
½ cup sugar
24 large California Giant strawberries, stem end cut evenly off
Instructions:
- Scoop out the white core of the strawberries, being very gentle so that the outside doesn’t split (can use a strawberry huller, serrated spoon or pairing knife)
- Slice just a little bit off the tip of the strawberry so that it can stand, while still not exposing an opening in the bottom
- Bring ¾ cup water to a boil and stir in the jello mixture until all dissolved, then stir in the lime zest
- In a medium volume measuring cup, add ½ cup vodka and then add enough ice to fill the measuring cup up to 1 ¼ cup
- Once the jello mixture is dissolved, pour it into the iced down vodka and stir until the ice no longer dissolves (I was left with like 1 T little ice chips that wouldn’t dissolve easily)
- Pour the jello mixture into the cored strawberries and gently place into the refrigerator and allow to cool till set throughout
- Once fully set, juice the limes into a small bowl and fill another small bowl with the sugar
- Take the set strawberries and dip just the top ends into lime juice and then immediately into the sugar
- Arrange on a platter and let your friends enjoy!
