Green has been my favorite color lately. I LOVE green smoothies, guacamole and salads, but I am so excited to add green hummus to my list! Can you believe the color?! It’s sooo pretty! I’ve tried pita chips and veggie sticks but I’m blown away by the texture and taste of strawberries dipped in this sweet pea hummus. This snack is delicious and super easy to prepare. I can’t wait to indulge during a pool day or after a workout when I'm needing a light snack to hold me over.
If you’re looking for a refreshing, mess free snack you have to try this sweet pea hummus with strawberries!
Ingredients:
2 jalapenos, deseeded and stems removed
Juice of 1 lemon
Zest of 1 lemon
10 oz frozen peas, thawed
1 cup canned chickpeas, drained
⅛ cup mint leaves
1 cup parsley leaves
1 clove garlic
2 tsp kosher salt
½ cup extra virgin olive oil
Tools needed:
Set of measuring cups
Blender
Microplane
Instructions:
Using tongs, char jalapenos over your gas flame or broil them until charred, toss in blender
In a blender, blend all ingredients together until ingredients are smooth, but still has a bit of grit to them
Serve with fresh California Giant strawberries and crackers
