Have you guys tried sweet potato toast yet? I absolutely love sweet potatoes (and the incredible health benefits that accompany them), but I'll admit, I was a little skeptical of this trend at first. But when I finally gave in, I was SO glad I did! You can't even taste the sweet potato when you top it with fresh blueberries, toasted walnuts, honey and ricotta cheese or my favorite combination of strawberries, almond butter, bananas and honey! AND it's replacing not-so-good carbs with nutrient-dense, amazing-for-you carbs. Sounds like a win-win to me! Plus, whether you're feelin' something savory or sweet, both of these combinations are beyond easy to make and only have 5-6 ingredients! I hope you enjoy them as much as I do!
Ingredients:
Savory blueberry toast (makes four servings)
6 oz California Giant blueberries
1 sweet potato
1/4 cup toasted walnuts
3 tbsp honey
1/2 cup ricota cheese
1 tsp oregano
Sweet strawberry toast (makes four servings)
1lb California Giant strawberries
1 sweet potato
1/2 almond butter
1 banana, sliced
3 tbsp honey
Instructions:
Savory blueberry toast (makes four servings)
Slice sweet potato into toast size slices. Put in toaster on the highest setting. Once it is toasted to your preference, layer with ricota cheese, walnuts, blueberries, honey and oregano.
Sweet strawberry toast (makes four servings)
Slice sweet potato into toast size slices. Put in toaster on the highest setting. Once it is toasted to your preference, layer with almond butter, bananas, strawberries and honey.
