Do you ever get in a “kitchen rut”? Like you've made it all, and it's time to switch it up? Well, that happened to me this week. So what is a cook/baker/blogger/food photographer to do? I called my mom. Duh.
My mom is like Martha Stewart. Seriously. Her house is always perfect. Her garden is always green and flourishing. And her recipes are to die for. So whenever I can’t decide what to make, my husband always says “Just call Laurie!”.
So this time when I asked my mom for some berry inspired fall recipes, she surprised me by going back to the basics. Like this easy and simple blackberry compote over Greek yogurt, sprinkled with granola. So simple, yet tastes incredible. And I used pumpkin spice granola, which makes it even more perfect for the fall weather we are having.
This recipe would be perfect for the morning after Thanksgiving, when you need something light to offset all of that pumpkin pie!
Ingredients for the compote:
2 cups of blackberries
1 cup of orange juice
2 ½ teaspoons of corn starch
½ cup of sugar
Dash of cinnamon
You will also need:
Plain Greek Yogurt
Your favorite granola ( I used a pumpkin spice version from Trader Joe's)
Instructions:
In a small bowl, mix corn starch and two tablespoons of orange juice; set aside. Then, sauté blackberries, orange juice, sugar and cinnamon over medium heat. After a few minutes, add corn starch mixture. Simmer until thick.
Top Greek yogurt with blackberry compote, granola, and more fresh berries!
