Crave-able Strawberry Crepes

When I think of lunch box foods, the first thing I think of is little turkey pinwheels. Kids love that it's a different shape and it's fun to make at home. In my lunch box as a kid, my dad would always include some prepackaged sweet treat, like an Oatmeal Cream Pie or Little Debbie. I know, who eats those anymore? But he knew we always liked a sweet treat after lunch, so he stuck it in there each day along with a cute note from dad!

Fast forward 10 years and I was on my own to find my own sweet snacks. After college, I became obsessed with making crepes and stuffing them with all types of things. You can stuff them with eggs and cheese, peanut butter and jelly - whatever you're craving! My favorite was to stuff them with something sweet and top them with berries. One of the best combinations was to just spread a few spoonfuls of caramel all over the crepe, top it with sliced strawberries, and then roll it up and eat it like a burrito, or little turkey pinwheel. Let your kids get involved the night before to make a fun lunchbox treat!

Plus - if you are hosting a ladies (or gentleman's) brunch, you can fold these in half, then in half again and dust them with powdered sugar and shingle them on a platter. They take no time to make, but look like you slaved away in the kitchen!

Ingredients:

For Crepe

1 cup all purpose flour

2 eggs

½ cup whole milk

½ cup water

¼ tsp salt

2 T butter, melted

3 T sugar

1 tsp vanilla

 

For Filling

1 cup caramel

16 strawberries, stems removed and sliced

 

Tools needed:

Set of measuring cups

Blender

Rubber Spatula

2 oz ladle or measuring cup

10 inch nonstick saute pan

Large spoon

Chef’s knife

 

How to:

In a blender, blend all together until smooth (making sure to pause and scrape down the sides occasionally)

Heat saute pan over medium heat

Pour 2 oz of crepe batter into center of pan and then quickly tilt the pan around in a circle to let the batter spread evenly to every edge.

Allow crepe to cook for 1 minute

Using a spatula, lift up one edge of crepe and grab with your fingers.  Carefully flip crepe onto the other side and cook for 1 more minute.

Using a large spoon, spread 2 tablespoons onto crepe and then top with sliced strawberries.

Roll crepe like a burrito and enjoy!
