I've been on a HUGE breakfast kick lately. I'm talking bacon, eggs, pancakes, waffles, every kind of toast imaginable - basically breakfast for every meal and loving every second of it. I'm not sure why exactly, but I think these pumpkin-spice blueberry waffles might have something to do with it. I can't stop making them... They're SO easy and you guys know how much I love pumpkin-spice. As for the cream cheese & maple syrup drizzle... pure bliss. I hope you all enjoy these as much as I have!
Ingredients:
2 cups California Giant blueberries
2 cups pancake mix
1 cup pumpkin puree
1/2 cup water
1 egg
1 tsp pumpkin spice
1 tsp cinnamon
4 oz softened cream cheese
1 cup pure maple syrup
Instructions:
Heat up waffle iron.
Mix together the pancake mix, pumpkin puree, water, egg, pumpkin spice, and cinnamon until combined. Be sure not to over mix!
Pour one cup of waffle mix into the waffle iron and add blueberries to preference.
Close and cook until golden brown or until the waffle iron beeps.
For the cream cheese & maple syrup drizzle, whip the cream cheese and maple syrup together for about one minute. Once combined, heat up in the microwave for about 45 seconds or until warm and easy to drizzle.
Pour the cream cheese & maple syrup drizzle over the waffles. Top with more blueberries, a pinch of cinnamon and enjoy!
