Have you ever had a grilled strawberry? Because if you haven't, you should! They're so good in the summer and perfect for all your backyard cookouts. This recipe is a great combo of sweet and savory and it was really easy to throw together! You can mix it up by adding your favorite summer veggies. For a little added texture, try adding sesame seeds to your chicken before grilling.

Ingredients:
2 chicken breasts, diced into large chunks (approx 6 pieces per breast)
1 yellow squash, cut into thick rounds
1 zucchini, cut into thick rounds
12 large California Giant strawberries, stems removed, kept whole
Zest of 1 lemon
3 T extra virgin olive oil
1 tsp kosher salt
10 turns of fresh cracked pepper
1 T honey
1 T balsamic vinegar
Metal skewers (or if using wood, make sure to soak them in water for 15 min prior)

Instructions:
- Pre-heat a grill on high
- Toss the diced chicken with 2 T olive oil, lemon zest, ½ tsp salt, and pepper
- Toss the sliced summer squash with 1 T olive oil and ½ tsp salt
- Build your skewers by alternating the strawberries, chicken, and squash so that each skewer has the same amount of all
- Grill the skewers both sides of the skewers for 4 minutes each then close the lid and let the grill finish cooking the chicken. Remove skewers when chicken is cooked throughout (approx 4 more minutes) **if your grill is hotter/colder, adjust the times so that the chicken isn’t undercooked or burnt
- While the skewers are resting, mix together the honey and balsamic vinegar. Drizzle the mixture over top of the skewers and enjoy!
